PREP: Defrost the pie crust!

PREP: Peel and slice 3 pounds of honeycrisp apples into 1/4-inch pieces for even cooking.

In a pot, melt 2 TB butter, add sliced apples, and cook until tender.

Add Sugars and Spices:
• 1/2 cup of brown sugar
• 1/4 cup of granulated sugar
• 1 teaspoon of cinnamon
• 1/2 teaspoon of pumpkin pie spice
• 1/4 teaspoon of salt

Cook for 10-15 minutes until apples soften.

Thicken filling by adding 2 tablespoons of cornstarch (adjust based on juice released) and mix.

Cook for 3-5 minutes until thick.

WAIT: Let filling cool in fridge.

PREP: Line the bottom of a 9-inch non-stick round pan with one layer of pie crust.

PREP: Slice the top layer of pie crust into 1/2 inch strips for the lattice.

MAKE SURE FILLING IS FULLY COOL BEFORE NEXT STEP TO AVOID MELTING DOUGH!

Pour filling into the pan.

Create a lattice pattern.

Sprinkle sugar on top.

Bake at 425 degrees for 40 minutes.
