PREP: Dice or slice 3 large carrots. Set aside in a bowl.

PREP: Measure 3 cups of egg noodles and add to bowl with carrots.

PREP: Dice 1 yellow onion.

PREP: Dice or slice 4-6 ribs of celery. Add to container with onion.

PREP: Mince 4 garlic cloves on top of celery and onion. Set aside.

PREP: Dice up about 1.5 pounds of chicken breast.

PREP: Add spices to a small bowl:
• Basil (1 teaspoon)
• Oregano (1 teaspoon)
• Salt (3 tablespoons)
• Black Pepper (1/2 tablespoon)

Melt 1 tablespoon of butter in a large pot over medium heat.

Add onion, celery, and garlic. Cook until just tender, about 5 minutes.

Add:
• Chicken broth (64 ounces - 2 boxes)
• Chicken breast
• Egg noodles (3 cups)
• Carrots
• Spice mix

Stir. Bring to a boil. Lower the heat, then cover and cook for 20 minutes
