PREP: Preheat oven to 350°F and line a muffin tin with 12 liners.

WET: In a medium bowl, whisk together:
• 2 eggs
• 4oz of applesauce
• 1/2 cups of oat milk
• 1/4 cup of maple syrup

DRY: Stir in:
• 3/4 cup of almond flour
• 1/2 cup of cocoa powder
• 1 cup of protein powder
• 1/2 teaspoon of baking soda
• 1/2 teaspoon of baking powder
• 1/2 teaspoon of salt

CHOCOLATE: Fold in 3/4 cup of the chocolate chips, then transfer the batter evenly into the muffin tin.

TOP: Top with 1/4 cup chocolate chips

BAKE: Bake for about 30 minutes, or until a toothpick comes out clean.

STORE: Store in an airtight container in the fridge for up to five days.

NOTES

I used Chocolate Orgain protein powder, but I could taste it more than I wanted to. I think I'll try the vanilla whey protein from Trader Joe's next.
