*Soak the lentils for at least 8 hours in a big bowl with plenty of water, then drain*

Put olive oil, onion, garlic and pepper in a soup pot with the sazón and adobo.

Cook on medium to medium low until the onion is clear ( don’t burn the garlic)

Add the lentils and stir, add the potatoes, stir some more

Add the sofrito and stir until everything is coated

Add the vegetable broth, bring to a boil, stir Then lower the temp to low or simmer.

Cook until the potatoes are tender & the lentils are soft- usually about 30-45 min.

Salt the pot AFTER the lentils are cooked because salt can make raw lentils harder.
